Quinoa Zucchini Clusters


Three of these tiny tasty treats - Quinoa Clusters - are less than a 100 calories. Tuck into a lunch bag or serve as a savory appetizer with wine.

Makes 40


  • 2 cups (500 ml) cooked quinoa (about 3/4 uncooked)
  • 1 cup (250 ml) shredded zucchini
  • 1 T. (15 ml) chopped green onions
  • 1 5.2 oz. pkg (150 g) Boursin cheese or substitute 5.2 oz. of soft cheese
  • 2 (104 ml) large eggs
  • 2 T. (28 g) Skinny B cereal pre-soaked in 1/4 c. water for 5 minutes
  • Salt to taste


  1. Preheat oven to 350 degrees
  2. In a large bowl add cooked quinoa, shredded zucchini, green onions
  3. Mix in cheese, breaking up with a spoon until evenly mixed
  4. In a separate bowl whisk eggs and soaked Skinny B together
  5. Add egg mixture to other ingredients and stir until evenly mixed
  6. Add seasoning to taste
  7. Spoon into a greased mini muffin tin, filling each cup to the top (1 heaping T. each)
  8. Bake for 12-14 minutes or until edges begin to brown
  9. Cool for 5 minutes before removing from pan
